- 300 g. calabaza

- En primer lugar cocemos las acelgas y al mismo tiempo el calabacín en la vaporera. Escurrimos bien y reservamos.
- Preparamos la masa de las albóndigas batiendo los huevos con el perejil y el ajo. Agregamos el salmón limpio de espinas y bien picado junto con las acelgas y el calabacín picadas muy menudas, las especias, la sal y el pan rallado.
- Formamos bolitas, las freímos ligeramente en aceite de oliva y las dejamos sobre un papel de cocina reservadas.
- En una cazuela u olla vertemos el caldo y agregamos en él el puerro, el apio, la calabaza y las judías verdes cortadas en trocitos.
- Lavamos muy bien el mijo y al comenzar a hervir el caldo lo añadimos a la olla y lo dejamos cocer todo. Unos minutos antes de terminar la cocción agregamos al caldo las albóndigas y pasados unos minutos apartamos del fuego y servimos.
